How gummy supplements are made

Gummies are candy-making with pharmaceutical discipline: the same cooking and depositing as confectionery, plus dosing accuracy, water-activity control and heavy-metal testing. Here is the line, step by step.

1. Gelling agent: pectin or gelatin

Everything starts with the choice of gel. Gelatin (bovine here; porcine is never used) sets firm and chewy, is cheaper, tolerates heat and high solids well — which is why high-dose creatine gummies often use it. Pectin (from citrus peel) is vegan, halal- and kosher-friendly, sets softer, and is sensitive to pH and calcium, so the formula must be balanced precisely. Most US and EU brands now choose pectin for label reasons; we default to pectin unless the dose makes gelatin the better carrier.

2. Cooking

Sugar (or allulose / maltitol for sugar-free), glucose syrup or fiber syrup and water are cooked to the target solids — around 78–82° Brix — then the gel is added. Temperature and Brix are logged per batch; this is where texture and shelf life are set.

3. Adding actives, flavor, color, acid

Actives go in after cooking, at the lowest temperature the gel allows, to protect heat-sensitive vitamins and botanicals. Formulas carry an overage so the label claim holds through shelf life. Acid (citric or malic) is added last to trigger pectin setting and give the sour note; natural colors and flavors follow.

4. Depositing

The hot mass is deposited into molds. Starch mogul lines print shapes into trays of dried starch, which also draws moisture out during curing. Starchless lines deposit into silicone or metal molds — cleaner, more precise on weight, and required for custom shapes. Each gummy is dosed by volume, so mass density is controlled to keep the per-piece active within ±5%.

5. Curing (the step that sets your lead time)

Deposited gummies rest 24–48 hours in a temperature- and humidity-controlled room to set and to reach the target water activity. This cannot be rushed without compromising shelf life. It is the main reason gummy lead time is 30 days rather than two weeks.

6. Demolding, polishing, inspection

Gummies are demolded, tumbled with a light coating (carnauba wax or coconut oil — vegan options available) so they do not stick, then screened for size and inspected for doubles and deformities.

8. Packing

Bottles (PET, induction seal, desiccant optional), stand-up pouches or jars. Your label is applied on the line — we print labels in-house, which is why a 100-unit label change costs nothing.

What drives cost

  • Actives — the biggest lever; a mushroom or creatine gummy costs several times a basic vitamin gummy in ingredients.
  • Gel — pectin costs more than gelatin and needs tighter process control.
  • Total gummy mass — 60 × 2.5 g is 150 g of gummy; count and piece size scale cost directly.
  • Sugar system — allulose sugar-free is the most expensive base.
  • Packaging — at 100 units a jar and box can cost as much as the gummies.

Frequently asked questions

Why do gummies take longer than capsules?

Curing. After depositing, gummies sit 24–48 hours to set and reach the target water activity. Capsules can be filled and bottled the same day. That is why gummy lead time is 30 days while a capsule run can be faster.

Why is water activity on your COA?

Water activity (aw) is the single best predictor of mold in gummies. We release only below 0.65 aw. A gummy that ships at 0.75 aw looks fine and molds in the customer’s cupboard.

Do vitamins survive the cooking step?

Heat-sensitive actives (vitamin C, probiotics, some botanicals) are added after cooking, at the lowest temperature the gel allows. Overage is built into the formula so the label claim is met through shelf life.

Can you do sugar-free?

Yes, with allulose or maltitol. The gel behaves differently, so sugar-free versions are re-formulated, not just swapped — expect one extra sample round.

Can I get a custom shape?

From 5,000 units, because a starchless mold is tooled per shape. Below that, choose bear, cube, ring or heart.
